One of the things I miss most being on a low carb diet, is PIZZA! The recipe for the dough is based off of this recipe from Ditch the Carbs. I tried making it for the first time last night and absolutely loved it. I did a couple things differently, which you’ll notice if you compare the two recipes, but overall it’s an amazing pizza recipe that tastes as close to the “real thing” as you can get!

Ingredients
- 1 3/4 Cups Shredded Cheese I used Mozzarella
- 3/4 Cup Almond Flour
- 2 Tablespoons Cream Cheese
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon Salt (or to taste)

Instructions

Gather all your ingredients. Here's what you'll need for the dough:

Mix the shredded cheese, almond flour and cream cheese together. I used my *clean* hands for all of the mixing (no one has time to be cleaning an extra spatula!! haha)

Once you've mixed it a bit, it will look like this:

Next, put it in the microwave on high for 1 minute. Mix it around a little...then put it back in for 30 seconds. It should look like this:

Then, add the egg, salt and seasoning.

Mush it all around, until it's formed a dough-like consistency, like this:

Next, put your dough-ball in between two pieces of parchment paper.

Parchment paper is one of the most amazing human-made gifts to the earth. I used to think you never really needed it...but you do. It makes everything so much easier!! Anyway, flatten the dough between the two pieces of parchment. You can use a rolling pin, but I just used my hands.

Transfer it to a pizza tray, or whatever you have laying around that you can put it on. I made this while we were up at the cabin, so all I had was a cookie tray, and it worked out fine. I put the dough, parchment and all, on the cookie tray, and then removed the top layer. The original recipe says to make fork marks in the dough to make sure it cooks evenly. I didn't do this, but I might try it next time just in case. I baked this at 300 for 30 minutes. Note that my oven at the cabin is not super awesome, so if you're using this recipe, make sure you're checking your oven to find the perfect temp and time for yours! The original recipe calls for 220 at 12-15 minutes, and that did NOT work for the oven we have here. But, once it's done, it will look like this!

Next, toppings!! I used tomato paste, but it was pretty thick. I actually might go for a lower carb pasta sauce next time.

Then, I added more cheese, and pepperoni. Other topping ideas might be sausage, different types of cheese, peppers, onions, whatever!

Then, throw it in the oven again until the cheese is melted, and it's looking nice and brown!

Cut it up and enjoy!
